Emily's Kumquat and Mint Beef Skewers

Ingredients:
Large piece of beef
4 small onions
3 kumquats
1 clove of garlic
1 slice of ginger
Fresh mint leaves
Dried bay leaves
Dried oregano
Salt and pepper
Flour
Extra-virgin olive oil

The skewers:
1. Cut meat into chunks and marinate with olive oil, finely chopped garlic and ginger, chopped mint leaves, dried bay leaves, dried oregano, salt, and pepper.
2. Skewer alternating with chunks of onions.
3. Arrange on grill and bake at 350 degrees, allowing juices to drip into a small amount of water in the tray.
4. When done, retrieve dripped juices and transfer to sauce pan.

The gravy:
1. Reduce the juices to desired consistency.
2. Add thinly sliced kumquat and chopped mint leaves. Salt and pepper to taste.
3. Add flour to make gravy consistency.
4. Garnish with fresh mint leaves.
